Ingredients
250gm Atherton Eye Fillet
1/2 Moreton Bay Bug
2 x local green Tiger prawns
50gm Melaleuca croc farm bacon
1 x serve fresh Asian style vegetables
1-2 tablespoons pickled ginger & mint salsa
Method
Wrap steak in crocodile bacon. Secure with skewer.Cook steak to desired. Grill1/2 bug on BBQ for approx 4 mins. Grill peeled and deveined prawns for approx 3 mins. Cook these as steak rests and veg steams. Arrange on plate as pictured. Spoon generous ammount of salas over dish and garnish with freshsrigs of mint and coriander.
Salsa
finely diced fresh Qld pineapple
pickled ginger to taste
trickle of sesame oil
splash of olive oil
chopped mint
sweet chilli sauce to taste
