Ingredients:
4 Banana Prawns pealed and divined
½ Mango diced
Green peppercorn
Fresh cream
Mango Wine
Sweet Potato
Lemon Myrtle Leafs
Method:
Sauté the Prawns and deglaze with Mango Wine
Add Cream and reduce. Add fresh Peppercorn and diced Mango.
Boil Sweet Potato with Lemon Myrtle Leafs.
Fill Piping Bag with the Sweet potato Puree. |
