Char Grilled Green Pepper Redclaw Yabbie with Sweet Pork Salad
Ingredients
4 large yabbies
1 Fresh chilli
1 Fresh garlic
1 Fish sauce
Salad
Half Julienne carrot
3 T Flat leaf parsley
3 T Coriander
2 T Mint
2 T Bean sprouts
half Lime
Sweet pork
2 Morganbury pork spare ribs
50 ml Vegetable oil
1 fresh garlic
1 cm fresh ginger
2 T palm sugar
50 ml Water
1 T fish sauce
1 T Aussie Pepper black pepper
1 T Aussie Pepper green pepper
Method
Steam spare ribs for 15 minutes
Allow to dry
Cut into small pieces
Deep fry in oil until crispy
In a mortar and petal crush garlic and ginger black/green pepper corns
Gently fry paste in oil 5 minutes
Add palm sugar and water and fish sauce to produce a syrup
Add crispy pork
Marinate yabbies with chilli garlic fish sauce 10 minutes char-grill yabbies on¬ medium flame
Assemble salad
Add sweet pork and mix
Arrange yabbies over salad
Drizzle sweet pork sauce
Annoint with Mena Creek green peppers |
